Harvest takes place at night in order to avoid high temperatures, helping minimise oxidation and the loss of aromatics. The wine is made with part of the grapes traditionally fermented in stainless steel tanks and part of grapes fermented in barrels. As a result there are delicate aromas of fennel and citrus. In the mouth, there?s a lively freshness, fine texture, and a rich finish. While the oak is present it does not mask the fruit.
